Cheesecake instructions

  1. Crush graham crackers as fine as possible.
  2. In a medium bowl, mix graham cracker crumbs with melted butter.
  3. Press crushed graham crackers onto bottom and half-side of spring-form pan.
  4. In a large bowl, mix cream cheese with sugar until smooth. Blend in milk, sour cream (NY Style only), vanilla, and flour until smooth, mix in the eggs one at a time, mixing just enough to incorporate.
  5. Preheat oven to 325 degrees F.
  6. Grease a 10 inch spring-form pan.
  7. Pour filling into prepared crust.
  8. Bake in preheated oven for 45 minutes. Turn the oven off, and let cake cool in oven with the door closed for 5 to 6 hours; this prevents cracking.
  9. Chill in refrigerator and serve.
